Our annual Christmas dinner event turned to France for its regional theme and we enjoyed a wonderful dinner complete with fine French wines at Vancouver's prestigious Terminal City Club. After a reception with a selection of Chef's hors d'oeuvres accompanied by Pol Roger Brut Reserve champagne we sat down to a first course of seared scallops with pea shoots and lobster sauté matched beautifully with a 2004 Chablis Premier Cru "Fourchaume" from William Fèvre. Our next course was foie gras two ways: seared foie gras with pear butter and a foie gras torchon with peach tart. The classic match for foie gras is a fine sauternes wine and our 1999 Château Liot fitted perfectly. Our expertly prepared prime tenderloin of beef with a fresh horseradish crust and a morel reduction was paired with a fine 1998 Bourgogne from Leroy, a wine at its peak and perfect with the beef. For our cheese course we visited Bordeaux with a 1995 Château du Moulin Rouge and a selection of French cheeses from, appropriately, our favourite cheese store, les amis du fromage. To finish, we were presented with a traditional and delicious bouche de Noël and an excellent and unusual Rivesaltes Hors d'Age from Domaine Força Real. A delightful evening was enjoyed by all as we prepared for the Holiday Season!
