Many IWFS members may recall the wonderful chocolate demonstration from Canada’s finest chocolatier and patissier, Thomas Haas, in the kitchen of Barb and Ken Cross three years ago. Thomas has now opened his new factory and patisserie and welcomed us with a tour, a comparative tasting of fine chocolate, a demonstration of the “Art of the Tart”—from simple to fabulously exotic—and, of course, some examples of his exquisite chocolates and desserts at his new location. During the evening we had the opportunity to learn new professional techniques and skills from Thomas. We sipped on a glass of wine as we watched the Master at work and enjoyed a cup of freshly made hot chocolate or cappuccino at the end of the evening.
